Kesar (Saffron) Elaichi Shrikhand Recipe

Shrikhand is a traditional Indian sweet dish prepared using thick strained yogurt, infused with saffron and cardamom. This creamy delight is popular during festivals and special occasions and pairs perfectly with hot puris or parathas. Here’s how you can make this delicious Kesar Elaichi Shrikhand at home in a few simple steps.


Ingredients For the Shrikhand:

• 1 kg thick curd (yogurt, Dahi) 
• ½ cup of powdered sugar (modify as necessary)
• A pinch of SaffronTree  saffron strands (Kesar )
• 1 tablespoon warm milk
• ½ teaspoon cardamom powder


For Garnish:

• 1 tablespoon sliced pistachios
• 1 tablespoon sliced almonds


Method


Step 1: Prepare Hung Curd

Start by lining a bowl or strainer with a clean muslin cloth. Next, add the curd, bring the edges of the cloth together, and tie it tightly to keep it secure. Hang it in a cool spot for about 3 hours to allow all the excess whey to drain. This results in a thick, smooth yogurt called hung curd, which forms the base of shrikhand.


Step 2: Soak the SaffronTree Saffron (Kesar)

Pour the warm milk into a small bowl, then drop in the saffronTree Saffron strands. Lightly rub them in the milk so they release a rich golden hue and a beautiful aroma. Set it aside for a few minutes so the color infuses well.


Step 3: Combine the Ingredients

Move the hung curd into a spacious mixing bowl. Add the powdered sugar and cardamom powder. Pour in the saffron-infused milk. Using a whisk, mix everything together until the sugar dissolves completely and the mixture is smooth and creamy. Taste and adjust sweetness if needed.


Step 4: Garnish and Serve

Once the shrikhand is ready, spoon it into serving bowls. Sprinkle sliced pistachios and almonds over the top for extra texture and flavour. Chill the shrikhand for an hour or two before serving — this enhances its taste and makes it extra refreshing.


Tip:

Fruity Variation
For a fruity twist, replace the saffron and cardamom with a cup of finely chopped fresh strawberries. Mix the fruit with the hung curd and sugar, then present it chilled.
